The dark skin was a mark given to them to show others that the person had been cursed because there were consequences for the people that associated with the cursed people in certain ways. Eventually the dark skin became a hereditary trait, and carries on today like that. Like Jake said, the curse itself isn't black skin, the black skin was to distinguish those who were cursed to those who weren't.
