Given the diet they had back in his day what would it have consisted of? Oats? Flour? Meat? Vegetables in season? Not much fruit I doubt except what they could grow.

Coffee and tea were a luxury. So was wine. The early saints used wine in their sacrament meetings until it became too difficult and expensive to obtain. That was when they started using water instead.

Joseph lived like a king with his prosperity gospel. The prosperity flowed directly upward to him.

If anyone ate well, I suspect it was he.
