It's like a debate, one gets assigned to argue a different side even if they don't believe exactly the issue. So I would argue that defending the undefendable is something Americans have a long tradition doing.
Everything is defendable.

Ask yourself, deep down, if the following are defendable:
1. "Marrying" and banging 14-year-old girls. 2. Sending your "brethren" on foreign missions and then "marrying" and banging their wives/daughters. 3. "Marrying" your foster daughters. 4. "Marrying" sister pairs (multiple times) 5. "Marrying" mother & daughter pairs (multiple times) 6. Committing character assassination against intended female targets should any female targets rebuff your overt sexual aggressions. 7. Concocting demonstrably fake "translations" of papyri (making the BoA completely and demonstrably false) and the Kinderhood Plate debacle. 8. Mountain Meadow Massacre, Blacks & Priesthood, Blood Atonement, Adam-God. 8. etc., etc., etc...
I understand your point that a person could "argue" any side of any issue, but I think to put the label of "defendable" on these points and so many others that Joseph's Myth and Bring'Em Young perpetrated against the world is just a little too pithy. Perhaps a more accurate way to portray this situation is to say that "Everything is arguable," but these atrocities and so many other things done during the early days of tscc, and, in many cases, still being perpetrated on the weak and gullible are not "defendable" nor "defensible." Just my $0.02.
