Made shrimp scampi for dinner last night. Always make extra shrimp so we can have shrimp and crabmeat omelets the next day. They were awesome. Can't get off the couch.

I Know. I used to spend a lot of time in New Orleans. An old, historic hotel, the Bourbon Orleans in the French Quarter, has an awesome restaurant. I loved having breakfast/brunch there.I tried most items, but I always came back to their crab and crawfish omelet. I learned how to make it- fairly decently. Since I moved away, crawfish, especially fresh crawfish, is non-existent for local Utahn's. So, I substitute shrimp, which is easier and way less to peel. My wife gets French butter, which makes a difference, so it's pretty close to the Orleans. Can't do it more than 4-6 times a year before my arteries would clog.

Curried Zucchini Pancakes with eggs over easy.

Never leave your car unlocked at church in the late summer or you'll come back to it to find bags of zucchini filling the back seat! I once thought this was an exaggeration...

Pancakes and sausage patties have become a Sunday ritual since the Church of the NFL started up again last month. My gal and I (clad in our t-shirts and underwear) watch the pre-game shows, make last minute adjustments to our fantasy teams, and then dig into our pancakes/sausage as the games start. The names of our fantasy teams?? Mine - "Show Me Your TD's", Hers - "Multiple Scoregasms"

Hard-boiled eggs - creamy, tender and delicious because I learned how to make them that way from my dear departed mom (miss you so much, sweetie!).
I'm not much of a cook, and I tend to graze-eat when home, so I always have HB eggs on hand - a great, healthy snack any time of the day or night. Sometimes mashed up with very finely chopped greens and a dab or two of olive oil mayo. YUM!
