Without googling their heights, here are my guesses:

For Brigham Young, I've heard anywhere between 5 ft. 6 in. and 5 ft. 10. I will guess 5 ft. 8.5 in.

Joseph Smith: 6 ft. 0 in.

John Taylor: 5 ft. 8 in.

Wilford Woodruff: 5 ft. 9 in.

Lorenzo Snow: 5 ft. 8 in.

Joseph F. Smith: 5 ft. 8 in.

Heber Grant: 5 ft. 11 in.

George Smith: 5 ft. 8 in.

David McKay: 5 ft. 10 in.

Joseph F. Smith: 5 ft. 7 in.

Harold B. Lee: 5 ft. 8 in.

Spencer Kimball: 5 ft. 6 in.

Ezra Benson: 6 ft. 0.5 in.

Howard Hunter: 5 ft. 10 in.

Gordon Hinckley: 5 ft. 6 in.

Thomas Monson: 6 ft. 4 in.

Russell Nelson: 5 ft. 10 in.

The church had a suit and a coat of Brigham’s on display in the church museum. He was pretty fat. Obviously clothes from his latter years.

I've stood next to Nelson. I'm 6'3". He's shorter than I by two or three inches. Your guess of 6'0" seems pretty close. He could be 6'1" but not taller.

Where the rest are concerned, I have no clue except that I've read Monson was 6'3".

Missionaries at BY’s grave used to tell visitors that BY was only 5’0.” I saw a sculpture of him standing next to Emma Smith who was sitting in a chair. From the relative sizes in the sculpture, I’d guess the missionaries were right.

Provided that artist was going for accuracy.

No love lost between the two of them.

Peterson had that "basketball mentality" seen too often - thinking height somehow give them authority.

Brigham Young (a man of his times) died in 1877. Dixie College was started in 1911.

I suspect that the average height of all general authorities today is 2 to 3 inches more than the average in Brigham's time. Just like the rest of the population.
