My (basically anglo evangelical christian) 2022 Texas Thanksgiving will include anglos, mexican-americans, chinese-americans, african-americans, agnostics, atheists, and nones. About 60 of us. The lines are somewhat blurred among family, friends, and honorary family (the second time you honor us with your presence you're officially a cousin).50-year tradition.
And are there Vegan Tofurky and Kosher options? No doubt there will be someone who wants gluten free side dishes too. J/K. Dessert is really what matters.
I did not grow up with Thanksgiving. I remember well harvest Festival Sunday in the church of my youth. The stand, from floor to ceiling, was backed by an immense tier of shelving filled to the brim with produce from the harvest, All to be dispersed to the needy after the service. The pilgrims would have been well aware of the practice as they gathered in their first bounty.
I embrace Thanksgiving for many reasons not least because of its inclusiveness. As the leader of the pilgrims said to Colonel Givens when he returned from the hunt and handed over turkeys: "Thanks Givens."
In addition to the standard fare, we had curried Indian turkey with jasmine rice, a few east Asian dishes I couldn't name, Haitian rice, authentic turkey enchiladas, seafood gumbo, a yellow Caribbean rice I can't name. I think our spread would stand up very well against the most upscale Relief Society dinner you've ever attended. My wife and I took home so much in leftovers, we won't be preparing food until Tuesday--at least!

Seconds, Thirds, Fourths are encouraged. Dessert table is always loaded. Kids can't believe that on Thanksgiving you can eat anything, anytime, without adult supervision. If anyone wants Vegan or Tofurky they are most welcome to provide. We won't judge.
My comment, corridorchristian, was a reference to a Pink Floyd song. As for me and my anarchistic house, anyone can still have his pudding even if he doesn't eat his meat.
25 hours or so to Kerrville. Love to have you. But be sure to arrive by Wednesday mid-day or so for the Wednesday night BBQ. There's a Friday morning brunch and Friday night lasagna dinner too. I will take you and yours to breakfast Saturday morning. Let us know how many will be with you each day. First time attendees aren't required to bring anything. After that you are a cousin and you go on the lists for food and set-up/clean-up.
