A few weeks ago I posted a formula for ginger ale. Some people low'd as how the cap might blow off the jar. so I made the following mix and there was no problem. So here it is again

Ginger Ale
Dissolve 2 cups granulated sugar in 3cups water.
Heat to a temperature of 200F
Stir in ¼ cup ground ginger.
Allow this mix to cool to 100 F.
DO NOT EVEN THINK OF DOING ANYTHING BEFORE100 F

Into this mix dissolve ¼ cup Red Star dry yeast.
Pour this into a 1 gallon plastic mayonnaise jar that has a screw on lid.
Fill the jar to 1in. Below the top with water.
Screw on the lid and place the jar on a shelf for two days turning it upside down and back twice a day.

At the end of this time unscrew the lid and let the ginger ale breath for about 30 minutes.
(at this time you can test it through a straw. It should have a slight tingle)

Recap the jar and put it it in the refrigerator for 4 days.
You should have ginger ale with a kick like a Kentucky mule.

I have done this for years and never had a top blow off!!

Looks like an interesting recipe. I make mine by boiling slices of sliced ginger to make a syrup. I then add the syrup slowly to soda water, taking care not to fiz up too much.

I want to get a soda infuser and try that.

I've used 2 liter soda bottles that I've sanitized first, and never had a problem. I put the syrup, ale yeast, and water in the bottle, but not to the top, then squeeze it so it's not the typical shape. I then put it aside to ferment, and once the bottle resumes the shape of a soda bottle, I put it in the refrigerator right away to stop the fermentation. After a few days of refrigeration, the ginger ale or soda is ready. I've also made sodas from other syrups, not just ginger syrup. I'm into homebrewing as a hobby, and while I've mostly made ale and mead, sometimes I'll do a ginger ale or other soda using yeast.

Don't use a mayo jar, as they are not designed for high pressure use.

Coke and Pepsi bottles, however, are designed for high pressure use, as they store carbonated liquid.

Mayo is exactly what I have been using for years with no adverse effects

Pick up a SodaStream. Make the ginger syrup as advised above. Skip the yeast. Pour a bit of ginger syrup in a glass, top with carbonated water from the SodaStream.

I do plain ginger syrup so i can use it in cocktails too. For soda just mix with club soda from my seltzer bottle.

I did my own tonic this way too but it's a little tricky to find the quinoa bark.
