I have:

10 lbs of basmati rice
4 lbs of red lentils
10 lbs of flour
about 5 lbs of sugar
Smoked Paprika
Nutmeg (Whole)
Turmeric
Curry Powder
Garam Masala
Cayenne Pepper
Cinnamon
Salt
Pepper
Worcestershire sauce
Ketchup
Hot sauce
Soy sauce
Mayo
~2 lbs butter
Olive oil
Vegetable oil
Pasta (maybe 5 lbs total, assorted varieties and butter noodles)
Ducks eggs
Onions (cooking, boiling, Vidalia, and red)
~8 cups of frozen vegetable stock


How can I make this stretch assuming I can find veg and not meat?

Make Spanish Rice, adding lentils, diced or chopped onions, and olive oil. If you don't have any tomato sauce or paste, I suppose you could improvise using the ketchup and hot sauce. Add a little cayenne if you want it to be extra hot.

Serve one duck egg with each person's serving to up the protein in the meal.

A hard boiled duck egg, instead of fried, would give a little change of texture. You could even make deviled duck eggs with the mayo and paprika.

Haha! No. I don’t eat balut.

I was the only woman in my class at X-ray school. I became friends with the Filipino guys, and we’d talk about their lives. All had college degrees, and one was an engineer. No, not a choo-choo train engineer, Dave.

So yeah. They told me about balut, and they said it was disgusting, but it was also something your friends or family got you to do. I’m sure that it’s a delicacy for some. But in general, it’s rank and gross. I’m not going to tell you how they make it.

Monkey brains, Dave? I didn’t know they ate those in the PI. I’d eat a monkey brain, preferably cooked, before I’d eat balut.

I have a good friend who spent a lot of time in the Philippines. He told me that when you donate blood there they don't give you a cookie and OJ. Instead you get a balut and 2 San Miguels.

He also said that the only thing more disgusting than balut was fermented shrimp paste.

P.J. O'Rourke describes it in one of his books from a visit to the Philippines in the Marcos era--only he called it "batok."
I won't go into detail, but might be difficult to do in the U.S. because it requires a fertilized egg.

If you had some vinegar you could make sweet and sour sauce...stir fry diced or sliced veg if you can only get that or diced meat plus veg.

Yep it is a thing although I make a quiche using onion and sliced zucchini rather than a pie. Slightly fry sliced onions..add to a pastry shell. Then lightly fry sliced zucchini and put on top of cooked onions. Beat eggs, add a small amount of milk. Pour into pastry , add grated cheese. Bake for about 30 mins.

Yay! Please keep them coming. I’m going to the market tomorrow, and I’m hoping I can get some veg and canned food like canned tomatoes, tomato paste. I’m definitely fighting someone for cabbage and kielbasa. Gotta have some comfort food. I also hope to get some squash. I have veg in my fridge suitable for another gallon of stock, but that’s it.

I’m also going to fight people for garlic and coffee.

Get canned condensed mushroom, celery, asparagus soups..they make good stock bases with pasta.

Drain a can of tuna, cook some pasta, add the broken up tuna, any veg you like, including canned corn, peas stir through..chuck a can of condensed soup over the lot plus grated cheese. Bake.

My one and only published recipe (in a Canadian pasta cookbook)


Scrawny Ronnie’s Killer Casserole

2 lbs. extra lean ground beef 1000g
1 large sweet onion, chopped 1
1 sweet red bell pepper, diced 1
1 jar (24 oz.) pasta sauce 1 jar (700mL)
2 tsp. garlic, minced 10mL
1 can (14 oz.) chili-style red kidney beans 1 can (398mL)
1 tsp. Worcestershire sauce 5mL
4 cups rotini pasta, uncooked 1000mL
1 cup old cheddar cheese, shredded 250mL
1 small pkg. back bacon (optional) 1 small pkg.
In large skillet or Dutch oven, cook ground beef until well done.
Drain well. Rinse in colander to remove all fat if desired. Add onion and
bell pepper. Cook until onion is translucent. Add pasta sauce, garlic, beans
and Worcestershire sauce. Bring mixture to a boil, then reduce heat and
simmer for 20 minutes.
Preheat oven to 325° F (160° C). Cook pasta according to package instructions.
Drain and transfer into a large casserole dish sprayed with non-stick spray or olive oil.
Add meat mixture and mix well. Use large spoon to press mixture into
casserole dish. Top with cheddar cheese. Add layer of sliced back bacon
if desired. Bake for 45 minutes or until cheese is crispy. Remove from oven
and let stand for five minutes.
Serves eight. Enjoy!!!

Just hard boiled about 3 dozen eggs and drank a pot of coffee. I’m ready to go dancing. I’ve been thinking about buying Ropers.

Am I allowed to wear those to the local country line dance? When this bullshit is over, I’m going to learn to ride a horse and a motorcycle. I’m going to see if I can still square dance. Prep school had a mandatory ballroom dance class. It was a freaking SUBJECT! I suppose they threw in some country and disco to keep us engaged. Not kidding. No samba. :(

I’ve been isolated for about six years. I don’t think it’s been good for me. I knew I could leave the apartment or house to do things, but there were times that I stayed inside all weekend and didn’t speak to anyone.

So I got a dog. I *had* to go outside. I *had* to speak to people. I *had* to take her to the dog park with a view of Mt Rainer. I *had* to talk to people at the park.

I *had* to take her to Lake Washington so she could try to swim. She loves it. And there were humans there, too.

I need to force myself to be around people. I’m afraid of the local skin heads. I stood behind one in the supermarket. He had swastikas and all manner of scary stuff tattooed on his head and neck. I looked downward until he left. He also cut in front of me in line. I stepped aside.

He’s not the only one I’ve seen.

Thing is, I’m not afraid of just that guy. I’m afraid of EVERYBODY. I’m even afraid of you wonderful people. I’m afraid if I meet you, you will think I’m crazy, odd, ugly, stupid, and you’ll wonder why you even bothered with me. That’s the truth. I don’t think you’ll hurt me. I think you’ll hate me.

So there’s that.

But when this shit is over, I’m going to try to stop being reclusive. I hope. Being alone isn’t healthy. I’d like to be healthy.

Did I mention I just drank a pot of coffee? :)

Time to escape into some books and see what tomorrow brings and what I bring to tomorrow.

Have you looked around you, dear Beth? You’re on a planet with nothing but (intermittently) odd, crazy, ugly, stupid people! Really annoying! But we look past all that ‘cause they’re also kind, funny, interesting and capable individuals a lot of the time.

When I have taken my 77 year old self out and about (before my covid seclusion), I too may have been regarded as o, c, u, & s, but I become too focused on my errands to care. That’s how you are when you take your pooch walking, swimming, etc. It’s quite lovely to give up on the approval rat race even for just a while.

You can also make a meat sauce with hamburger, onions, canned stewed tomatoes, tomato sauce and paste and sauces you like. Break it up and freeze it. Then you can put it on what pasta you can get. Get a ham. Eat what you can and freeze the rest. Bacon keeps. Tuna, PB, a big block of cheese. Dried fruit. Salt. We have lots of ranches close, I got a big ass ham, three little ones, bacon and summer sausage as a last fallback. Bleach if you can get it but don't hold your breath.

Chewy is still shipping. I am getting a bag ahead of schedule on my auto ship. It's 30 lbs and the girls together are 15 lbs so it will last a good long time.

I used to and miss them to pieces. These days I have a coton de tulear (10 lb and a papillon (5 lb). I got the papi because they are the smartest toy breed. I do believe it is true because Margaux is much like my BCs. She even plays some of the same solo games. Very driven and addicted to the tennis ball. Being black and white with a white blaze down her nose she looks a bit like one too. Our coton, Angel, is the biggest lap dog EVER. No lie, she gets up in the morning, piddles, then takes a nap! In the summer I make her walk in the back yard with me and that is about all the exercise she wants. She has to be on a leash because she eats things she shouldn't. Margaux kind of bounces like a bunny as she fetches and we have hawks, cats and who knows what back in the little preserve behind us so we got her a Coyote Vest. Doesn't slow her down a bit and she can run and roll no problem. If anyone has a small dog I highly recommend them.

I saw a white coton de tulear today while out on a walk in my neighborhood. He is the most handsome little fellow! He was playing quite nicely with a much smaller puppy. I think the woman who had the puppy said that he was a King Charles Cavalier spaniel crossed with a poodle. Major cuteness!

When I went to the supermarket, it was so, so eerie. I found some things I wanted, but ugh. I've been ordering delivery, which is not smart because delivery is so expensive, but I need some Burgerville milkshakes.

One dozen eggs for "½ lb of premium steaks (rib, NY strip, sirloin..) or 1 lb of most other cuts (roasts, round steak, stew meat, ground beef, osso Bucco, liver, tongue, etc..)"
