Probably the Easter Ham. Though I've had lamb and even trout from Greek Easter celebrations. Ham is cheaper and more available.

But climate matters.

Hams were traditionally air cured. The pigs were slaughtered in late fall, when the air temps were low enough that the meat wouldn't spoil (before refrigeration). The air cure is usually complete around April 1, just in time for an Easter celebration.

I think ham is an American tradition. I don't recall it being much on the menu growing up in the "other Eden". Give me lamb, which I am having today, over anything else.

My Mom used to cook lamb for Easter. It was great, but then she made us eat it with some kind of mint jelly that she made. Couldn't stand it. Ruined the lamb.

Good point there, too. I got into a discussion with my son last night about Jews not eating pork because pigs are scavengers (I took 'scavengers' as animals who eat dead meat). But isn't that what we do ?

Ours is just wrapped in plastic and without tire tracks.
