Cinnamon, ginger, oregano, basil... if I had to choose just one, fresh garlic, although it is probably more a seasoning than an actual spice.

How much, and do you grind it first with mortar & pestle, please do tell. I make a "killer" lasagne too, and Cabernet Sauvignon is a necessity to the tomato sauce.

It was the spice that lead to a pepper spice addiction, paprika, both Spanish and Hungarian, sweet, or hot. Good chili powders from around the world.

No, I don't use Cayenne as much but my use of "chili pepper" based spices has gone through the roof. It gets to be an expensive habit.

I could never choose. I have more spices than anyone I know. i grow a lot of herbs in my garden. I love cooking with all of them.

They aren't spices, but other flavors I love are citrus, onion, garlic, good chocolate, wine.

I love cinnamon, ginger, garlic, cumin, and cayenne pepper. One of my favorite stores is Penzey's, and I'm fortunate enough to live within driving distance so I go there whenever I can. Their spice blends are really good, plus I can get hard to find spices such as gallingale. They also make a great ranch dressing blend, all you need is the buttermilk and mayo for some really good dressing.

My taste for spice depends on what I am in the mood for. If I were to pick a spice today, I would pick a different one tomorrow.

I will say that when it comes to the green leaf spices, oregano, sage, thyme, basil, etc.. FRESH is the only way to cook.
